Intensities in different color bands are wildly different on mars compared to earth, apparently due to suspended dust etc. On viking, the Red Filter photos were partly saturated (indicating the red color was very prominent) and so red was EVEN brighter that reported by the camera data. With a wrong red channel combined with the green and blue you seem to get a blue sky

Hence, they had to take a few guesses at how much to knotch back the Green and blue images to compensate for the saturated red channel and hence accurately portray color on the mars Surface.

Even compensating so that their Reference color palettes in the photograph were accurate wasnt sufficient to guess the adjustment, as the atmospheric dust would act like a "red filter" - so even the white lander should look a bit reddish under these conditions. Hence, there was a bit of "art" in adjusting the photos -
